Concord Grape Pie



Serves/Makes: 8
  

Ingredients:
  • 4 1/2 cups organic Concord grapes

  • 1 cup organic sugar
  • 
1/4 cup all-purpose, organic flour
  • 
2 teaspoons lemon juice
  • 
1/8 teaspoon salt
  • 
1 unbaked pastry shell (9 inches)

(STREUSEL):
  • 
1/2 cup quick-cooking, organic oats
  • 
1/2 cup packed, organic, brown sugar
  • 
1/4 cup all-purpose, organic flour
  • 
1/4 cup organic butter

Directions:
  1. Squeeze the end of each grape opposite the stem to separate skins from pulp.
  2. Chop skins a bit in a food processor. Set skins aside.
  3. Place pulp in a medium saucepan; bring to a boil. Simmer and stir for 1 minute.
  4. Press through a strainer or food mill to remove seeds.
  5. Combine pulp, skins, sugar, flour, lemon juice and salt; pour into pastry shell.
  6. Combine oats, brown sugar and flour; cut in butter until crumbly. Sprinkle over filling.
  7. Cover edges of pastry with foil.
  8. Bake at 425F for 15 minutes.
  9. Remove foil; bake 20 minutes more or until golden brown.
  10. Cool on a wire rack.

Lavender Ice Cream
Serves/Makes: 10 servings

Ingredients:
  • 4 cups organic, whole milk

  • 1/2 cup organic sugar

  • 1/4 cup wildflower honey
  • 
3 whole fresh lavender flower bud tops (each about 5 inches long) or 2 tablespoons dried lavender buds
  • Fresh berries (optional)

Directions:
  1. In a heavy medium saucepan heat  milk over medium heat till hot, but not boiling.
  2. Remove from heat; stir in sugar, honey, and lavender or mint.
  3. Cover and steep till mixture has cooled to room temperature (45 to 60 minutes).
  4. Strain milk mixture; discard lavender or mint.


  5. Freeze ice cream mixture in a 2-quart ice cream freezer according to manufacturer’s directions.
  6. Transfer frozen ice cream to a clean freezer container with a tight-fitting lid; pack down with a spoon.
  7. Freeze for at least 4 hours or for up to 1 month.
  8. Let stand at room temperature for 5 minutes before serving.

Serve with fresh berries and sprinkled with lavender buds.
